Beans On Bread
Did I mention that I love beans? I do, and here is one of my favorite lazy meals that I fancied up a bit last night because the leftover planets were all in alignment. My normal beans on bread typically amounts to some baked beans dumped on some bread and doused with hot sauce of an appropriate variety. On occasion I'll go the beanie weenie route. This time I'm going top-shelf with some leftover tri-tip from Sunday night, some new beans, and sauteed onions and peppers.

Cheater Homemade Pastrami
Homemade pastrami is something that has been on my barbecue bucket list for a long time. Even this cheater version turned out better than I expected, and I'd be hard-pressed to go back to the standard grocery store version. This is a cheater version because I started with store-bought corned beef, as opposed to corning the brisket myself. I'll try the "real" version sometime, but for now this at least gives me a baseline for comparison when I do.

County Fair Onion Burgers
It's that time of year. The time in late summer when fairs are in full-swing all across America. Sure, it's fun to go see the animals, hit the cheesy rides, and people watch, but let's face it, most folks go to spend too much money on incredibly unhealthy yet delicious food. Each year I'm amazed at what the fair food purveyors are slinging. I think that if your wares can be fried, dipped, frozen, roasted, served in a cup, on a stick or in some form of bread, you're approved to vend.
